The course begins with a look at the essential tools and equipment you’ll be using, the process of designing a cake, and how to prepare yourself, your workspace and your ingredients.
You’ll be guided through baking a Madeira cake, a luxurious chocolate sponge, and a light fruit cake. Additionally, you’ll learn how to adjust ingredients for varying tastes and cake tin sizes.
You’ll discover how to level, torte, and fill your sponge with delicious fillings and cover in a buttercream crumb coating - ready to be covered in fondant icing. For fruit cakes, we look at how to cover them with an apricot jam glaze and marzipan.
The course then takes you through working with pre-made fondant and achieving a crisp, professional finish. You’ll learn about various cake decorations, and follow step-by-step guides to create a teddy bear and number toppers. The course also covers how to make 2D and 3D decorations.
Finally, you’ll be shown how to combine your decorations and finish your cake. You’ll also be guided through other essential information, such as how to take a clear photograph of your creation, how to protect and transport it to a venue, and the food safety considerations, potential allergens and inedible parts of the cake that you should discuss with the recipient.
