Aimed at people in full-time employment who wish to further their career and gain valuable training, qualifications and guidance within the workplace. Typically preparing, cooking, and finishing a range of dishes from relevant menus, you will learn high levels of health and safety and food safety, using a mixture of fresh and pre-prepared ingredients.
The qualification consists of the Technical Certificate, NVQ and Level 1 award in English and maths. During your course you will gain practical experience at work and attend occasional workshops at College to acquire theory and the underpinning knowledge and to achieve a Level 1 award in English, maths and ICT. Mandatory units: Maintain food safety when storing, preparing and cooking food Work effectively as part of a hospitality team Maintain a safe, hygienic and secure working environment Optional units include: Cook-chill food Produce basic meat dishes Produce basic rice, pulse and grain dishes Produce basic hot and cold desserts Produce flour, dough and tray-baked products Modify the content of dishes Prepare and cook food to meet the requirements of allergy sufferers.
After completion of this course you may be able to join the Advanced apprenticeship in professional cookery or join the industry to become a chef, fast food service assistant or kitchen assistant. This course opens up a host of career opportunities.
Suitability - Who should attend?
Employment in a suitable job role. GCSEs in maths and English language grade A* to E or 3-9. Some employers may also specify additional qualifications. We will provide individual advice and guidance for applicants who do not meet these entry requirements.
